In no other type of whisky (please note correct English spelling), is there as much variance as found in single malt scotch. The ingredients are simple; water, barley, and yeast. The uniqueness of the single malt scotch come from external factors during the distillation and ageing. First, the barley is malted and then dried. Drying is done with a variety of products from wood and coal to peat. Peat will impart a smoky flavor in the barley grains, More peat, the heavier the smoke. The Barley is then mashed and distilled. Once the whiskey is distilled, it is placed into casks to age. Oak casks are generally used but some may be new, but usually they have been filled with some other product. Traditionally sherry casks were used, but now, a large number of distilleries use old bourbon casks, as well as used wine casks. The final factor in determining Single Malt Scotch is the number of shipper bottlings now available. Distilleries will sell off full casks to individuals who will age the scotch in differnet barrel types for different lengths of time. : Matheson had simply converted the old brewery building into his distillery, and this was to remain at the heart of the operation until its eventual replacement by the main part of the present structure at the end of the 19th Century. He had plans for the development of his premises, but these had never quite managed to get off the drawing board.
