Throughout this site, the words "whisky" and "whiskey" have been used interchangeably but not randomly. The word itself is an import from colonial times; American and Irish whiskeys use this spelling (with the exception of the spelling of "Whisky Rebellion") while Scottish and Canadian whiskies retain the older form, whisky. Regardless of the way you spell it, though, whisky was and is a drink with a timeless flavour and a sparkling future.
'Tis appropriate, then, to leave you with an old Gaelic toast:
May you have warm words on a cold evening, a full moon on a dark night, and the road downhill all the way to your door.
